Banana Pineapple Bread

A soft, moist homemade quick bread with banana and pineapple


2 loaves


3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon salt
3 eggs
2 cups sugar
1 cup oil
2 teaspoons vanilla extract
2 cups mashed bananas (about 4 medium bananas)
1 cup crushed pineapple (with the excess liquid drained; this is almost the amount in a 15-ounce can of pineapple)


1. In large mixing bowl, combine flour, baking soda, cinnamon, and salt.

2. In another mixing bowl, beat together the eggs and sugar. Add remaining ingredients, beating until well mixed.

3. Pour wet ingredients into bowl of dry ingredients and stir until moistened. Don't over-beat.

4. Pour batter into two greased and floured loaf pans (use smaller loaf pans -- 6x3-inch, or use several mini loaf pans). Bake at 350 degrees for 60 minutes or until loaves test done.

This is a wonderful banana bread recipe. The pineapple and banana flavors go perfectly together, and it makes a moist, spicy loaf. We like to freeze the loaf and then later, thaw and slice. It still tastes delicious! This is an easy recipe and is complimented by guests. My rating: 10/10


I started to make this bread and realized that I only had one cup of white sugar left, so I used half white and half brown. It turned out very well. I got 6 mini loaves which took about 45 minutes to bake. The only thing I would do is add a little more cinnamon next time. Thanks Tammy!


I made this this morning for my Mom and Dad and I for breakfast, and it is delicious! I only had two eggs (we do our shopping on Saturdays--but last week we went Wednesday, so it's been over a week), so it was a little crumbly, but it still tasted great. I also used bigger loaf pans, because I don't have any 6x3 (I think the ones I used were 8.25x4), and they still filled the pans fine. We'll certainly be having it again!

I tried to make this Saturday. I tried it in my bread machine on the "quick" bread setting. WARNING: This recipe (measurements as shown) will NOT work with a bread machine. Perhaps if the measurements were different it might work. The bread was far from being done...when the machine was done. I'm going to try this again only by hand.


I had some banana and some pineapple left from another recipe so I made this bread yesterday. We had it for tea, and then again for breakfast this morning, it was really tasty. I had never combined banana and pineapple like this before, and it was a very pleasant surprise.


This is a delicious banana bread recipe! It has become my favourite, I think. I really enjoy the combination of bananas and pineapples. Yummy!! A fast recipe to make too. :)


Made this tonight and wasn't sure we would like the combination. Tammy, we loved it! It was delicious and a new favorite at our house. I was hoping to bring some to work tomorrow but no such luck. It was gone as quickly as I made it! Thanks, Tammy.


I baked this bread for a picky crew a short while ago. I had to bake two different batches. One with sugar and one without. And...I got great reviews for both! No joke! I'm definitely baking this again! =D


Made this last night. Did a couple tweaks. Try adding a TB of banana liqueur and use 1 cup whole wheat flour. I like my banana bread heavy and moist...this was great. Everyone at the office raved about it today. Thanks Tammy!
