Broccoli and Cheese Mina

A savory mina, made from layered matzos with a filling of broccoli, onions, egg, and three cheeses

4-6 servings (as a main dish) or 8 servings (as a side dish)

4 cups of bite-sized fresh broccoli florets (or one 14-ounce bag of frozen broccoli)
1 small onion, chopped
8 matzo squares
1/4 cup (1/2 stick) cold butter, chopped
2 1/4 cups (10 ounces) shredded cheddar cheese
1 1/4 cups cottage cheese
3/4 cup freshly grated Parmesan cheese
2 green onions, chopped
5 eggs
3 tablespoons water
2 cloves garlic, minced

1. Boil or steam broccoli and onion until broccoli is bright green and crisp-tender. Drain.

2. Wet 4 matzos (briefly) under running water, then set aside to soak. Matzos should be slightly soft after soaking, but not soggy or falling apart.

3. Butter a large baking sheet. The baking sheet needs to be large enough to place all 4 matzos in a single layer. Use two sheets if necessary.

4. Place the dampened matzos on the greased sheet(s). Top with even layers of broccoli and onion, shredded cheddar cheese, cottage cheese, Parmesan cheese, and green onions.

5. In a small bowl, lightly beat the eggs and water. Pour slightly less than half of the egg mixture over the broccoli and cheeses.

6. Wet the remaining matzos and place on top, again, in a single layer. Pour the remaining beaten egg over the top. Sprinkle minced garlic, and dot with half of the butter.

7. Bake at 375 degrees for 20 minutes. Dot with remaining butter and return to oven. Bake 10 minutes longer, or until the mina is golden brown and crisp on top. Serve hot or warm.

This is a very tasty layered baked dish. The matzos take on the flavor of the filling, and the very cheesy broccoli and onion filling is delicious! This is a great Passover meal and a nice change from the ordinary. My rating: 10/10

So filling!
I made this because my kids love cruciferous veggies and it looked so good! It turned out well, even though my mind was on another planet and I goofed a few things! First I replaced cottage cheese with ricotta cheese ( the Italian in me) and then I layer it all and threw it in the oven. Then I realized 5 mins in that I forgot the egg mixture! SO I pulled it out and added that. Then when I added the las tof the butter- I turned off the oven for some reason ( don't ask- it was a crazy day) and when my timer went off and things didn't seem right I made the discovery and added 10 more minutes of cook time. SO even though I was not worthy of making cold cereal that day- it turned out great and my 20 month old thought it was pizza and gobbled it down! Thanks!

My husband and I really liked this recipe. The kids don't like broccoli so they weren't as thrilled, but they did enjoy eating *around* the broccoli. It was a great recipe to use during Unleavened Bread.

Delicious
This is an easy, fast and delicious recipe. Could anyone ask for more? It was also a nice change from what we usually eat, as I had never cooked matzos before, and I put feta cheese because I didn't have any parmesan. Thanks for sharing this recipe with us :) we loved it!

Very good.
Dh and I really liked this recipe.We did it in one smaller pan than a 9x13.I only used 1 1/2 crackers for each layer.It was really good.I will be making it again soon.The reason I rated it a 8 was only cause I cut out half the butter and did not use as many crackers as it called for since I didn't think it needed it.We will be making it again soon.Thanks- I would like to see more recipes using these crackers up since I have alot of them now. My husband does not like noodles and using the crackers made it really nice for him.Now I am trying to think of different things I can use the crackers for and make more casseroles.
