Broiled Stuffed Pepper Wedges

Colorful bell pepper wedges, stuffed with cheeses and broiled

Yield: 

4 servings

Ingredients: 

1/2 cup chive-and-onion cream cheese spread
1 tablespoon chopped black olives
2 medium bell peppers (any color)
1/4 cup (2 ounces) shredded cheddar cheese

Instructions: 

1. Cut each pepper into eight wedges.

2. Combine cream cheese and olives in a small bowl.

3. Spread about 2 teaspoons of mixture on each pepper wedge and sprinkle with chedder cheese.

4. Line a baking sheet with foil, and place wedges on top. (The foil will prevent burned cheese that sticks to the baking sheet!)

5. Broil in oven for 6 to 8 minutes, or until cheese is melted and peppers begin to blacken slightly. Serve warm or cold.

This is a yummy, quick and easy summer appetizer! I made my own onion/chive cream cheese for this. I didn't measure the cheddar cheese, I just sprinkled a bit on. I really like bell peppers (even just plain!) as well as cheese, so I absolutely loved this appetizer! Joshua really liked it, as well. It's fun to make, and very attractive. A perfect complement to grilled foods. :D My rating: 10/10

Tastes great

These are not only pretty once they're done, but taste good, too. I was unable to broil them (our broiler has never worked), so had to bake them. But they did not suffer because of it. These are great and I definitely recommend them. They're very easy to prepare, so would make excellent last minute appetizers for a party, too.

These are fast and simple to make!! I seasoned some plain cream cheese and it turned out delicious! A tasty way to eat peppers!

So tasty and easy to make!

I made this with French Onion Cheedar Cheese spread- no olives. It was deliciously tasty and so easy to make. It has become a favourite in our house!
