New Recipe: Turkey Sausage Sweet Potato Hash
This Turkey Sausage Sweet Potato Hash is one of my favorite winter meals. I have to stop myself from filling my plate a second time! The leftovers are just as good re-warmed, so I make a huge batch and it lasts for several days in the fridge.
Remember my favorite turkey breakfast sausage recipe? Well, this Hash is that sausage, tossed with roasted sweet potatoes and brussels sprouts. Add some chopped apple in the spicy sausage recipe and this dish is just one amazing sweet and spicy hash. Even better, it's healthy and feeds a crowd!
The inspiration for this combination of ingredients came from my friend Nichelle, who served this for a New Year's Day brunch at her house in 2012. A big bowl of this Turkey Hash fed both our families, 13 people in all. I begged her to write down a recipe for me. She insisted that she just threw some things together and "there isn't really a recipe..." but I knew I didn't want to forget such a tasty meal.
I buy all the ingredients at Costco. I usually make a double batch, which uses a 2-pound bag of brussels sprouts, 4 pounds of sweet potatoes, and a lot of ground turkey.
