
A light creamy guacamole that even picky eaters will love!
4-6 servings
2 large ripe avocados*
2 tablespoons lime or lemon juice
3 tablespoons fresh chopped cilantro
1/4 cup minced red onion
1/2 teaspoon salt
Several shakes of Tapatio or your favorite hot sauce
1/2 cup sour cream

1. Slice open avocados, remove pits, and scoop out the meat with a large spoon.
2. In a small-medium mixing bowl, mash avocados with lime/lemon juice. Then, stir in remaining ingredients.

Serve fresh with bean tacos, taco salad, homemade pita chips, or your favorite Mexican food!

*Avocados are ripe when soft to the touch and very dark green on the outside. Ripe avocados can be stored in the fridge for a few days before using.
Guacamole is easy to experiment with! For a more authentic version, replace the hot sauce with a finely chopped seeded jalapeno or pepper of your choice. You can also add a spoonful of fresh tomato salsa and stir it into the guacamole.
Guacamole is best served fresh, but can be kept in the fridge for a couple days after making. To minimize browning, store leftover guacamole in a small airtight container. Squeeze lime juice over the top of the guacamole and place plastic wrap against the juice to prevent air exposure.

This is my favorite guacamole recipe, ever!
Many thanks to my friend Jennifer for the idea of adding some sour cream into the guacamole. It lends a smooth, creamy, and almost... sweet taste to the guacamole and is truly the difference between a so-so guac and a "Can I just eat the whole bowl?!" guac!!
Yehoshua (6) saw me making this and asked if I could leave out the cilantro. I said I would for part of it, since I know he really dislikes cilantro. Then he spied the avocados. "Can you leave out the avocados too for me?" :) I told him that wasn't possible since guacamole IS avocados! I ended up just making the recipe as written and when Yehoshua tried a bite (on a homemade pita chip) he was surprised that he actually liked it after all!
Joshua had a similar reaction when I told him I'd made guacamole. He isn't a big fan of avocados and absolutely hates fresh cilantro, but I asked him to try a bite anyway. He took a bite... and then another, proclaiming it to be the best guacamole he'd ever eaten! I think he was shocked that I had made a guacamole that he actually liked, and of course I was pretty happy to see it go over so well. :)
