Description: 

A quick summer apple crisp: sliced apples topped with an oatmeal crumb topping, baked until crisp

Yield: 

12 servings

Ingredients: 

8 cups (about 9-10 medium) cored, peeled, and sliced cooking apples
2 Tablespoons lemon juice
2/3 cup flour
1 1/3 cup (packed) brown sugar
1 1/2 teaspoons cinnamon
1 1/2 cups quick oats
2/3 cup butter, softened
1/4 cup sunflower seeds, optional

Instructions: 

1. Spread apple slices in a greased 9 x 13 baking dish. Sprinkle with lemon juice. (Skip lemon juice if apples are extremely tart.)

2. Combine flour, brown sugar, cinnamon, and oats. Add melted butter and mix until crumbly. Sprinkle over apples. Top with sunflower seeds if desired.

3. Bake at 375 degrees for 25-30 minutes or until top is golden brown and apples test done.

This is the best apple crisp recipe! It is so easy to make, and a great way to enjoy apples. I love the oatmeal topping. This dessert never lasts long at our house. My rating: 10/10

I made this tonight...

I did, however, cut down on the brown sugar--I used a scant cup, and it is sweet enough for us. It's very good with a bit of whipped cream on top.

MMMMM

I made this last night and served it with vanilla ice cream as we had some friends over. Everybody just loved it. I was hoping there would be some leftover for us today, but no, it disappeared in no time!

My husband at one point asked me if I could just make a batch of "Crisp" without the healthful fruit. This recipe comes close. I used a smaller (but more decorative) pan and the CRISP was almost too crisp (hard) but believe me... my men are snarfing it down. I also used more than 8 apples. I had them, they looked so lonely with all their friends peeled so I put in about 12 total.
I think one could easily scale back on the brown sugar or use a HUGE pan (even bigger than 9x13) or make two batches and use lots of apples. Then again if you have crisp-aholics in your house like I do, you may want to stick with a 7x10 pan and just enjoy the topping.

Very Yummy!

My children loved this! It was very good topped with vanilla ice cream. So simple to make. Plenty sweet!
