
A quick and easy summer appetizer combining grilled chicken, diced veggies, and fresh spinach leaves
about 6 small servings
1 grilled chicken breast*, cooled and sliced into thin 1-inch slices
1 tomato, diced into pieces about the size of the chicken pieces
1/2 cup red or yellow bell peppers, sliced into 1-inch slices
Fresh spinach leaves
toothpicks (do not eat these though!) ;)
Stack a piece of tomato, a piece of chicken, and a piece of pepper. Wrap with a spinach leaf and secure with a toothpick. Continue until ingredients are all used.
*Seasoned chicken breast works wonderfully!

This is an easy summer appetizer recipe, and a great use for leftover grilled chicken! I think these taste yummy, and can be made ahead. You can also substitute other veggies for the tomatoes and peppers, if you wish. My rating: 9/10.
