Grilled Cheese Loaf

Description: 

A hearty Italian bread layered with a white cheesy blend of cream cheese, mozzarella cheese, onions, and parsley

Yield: 

8 servings

Ingredients: 

3 oz cream cheese, softened
2 T butter or margarine, softened
1 c (4 oz) shredded mozzarella cheese
1/4 c chopped green onions (with tops)
1/2 t garlic salt
1/4 t parsley flakes
1 loaf (1 lb) Italian bread, sliced

Instructions: 

1. In a mixing bowl, beat cream cheese and butter. Add cheese, onions, garlic salt, and parsley; mix well.

2. Spread on one side of each slice of bread. Put cheesy sides together and put bread back into a loaf shape. Wrap loaf in a large piece of heavy-duty foil and seal tightly.

3. Grill over medium coals for 8-10 minutes, turning once. Unwrap foil and grill 5 minutes longer.

Additional Notes: 

Oven version:

Follow steps 1 and 2; bake at 375 degrees for 15 minutes; open top of foil and bake 5-10 minutes longer.

This cheesy variation of garlic bread is highly praised whenever I serve it. The recipe makes 8 "servings" but there are rarely leftovers, even when only 4 people are at the meal. ;) If I don't have green onions on hand, I substitute minced white onions, and it still turns out well. We love this recipe, especially made with my Italian Bread recipe. My rating: 10/10

What a wonderfully unique garlic bread! The last time we ate it, I had to stop my son from eating half of a loaf by himself.

I am definitely a cheese person! This has more flavor and a really great "cheesiness" to it! With the onions added, it's perfect. :) Goes great with lasgna!

10/10 My mouth is watering just thinking about it!

I made this two days ago and it is superb. Rather than grilling it, though, we put it in the oven. (350 degrees for about 20 minutes) It is very delicious and went over very well with our company! I adore cheese, onions, garlic, and Italian bread, so this recipe is a favorite!

Perfect complement to grilled meats (10/10)

Before making this loaf I had heard of grilled meats, grilled vegetables, grilled fruits--even grilled tofu. I had also seen people toast their bread on a grill. But I had never seen or heard of a grilled loaf of bread! This recipe is very neat and has a great taste. The flavor improves when it is cooked on a grill that is cooking meat, especially steaks, as the bread gets a pleasant smokey aroma. The slices have a strong yet pleasant flavor and are a great accent to grilled meats.
