Grilled Garlic Lime Chicken

Zesty garlic chicken breast grilled to perfection


6 chicken breasts (6-12 servings)


6 skinless, boneless chicken breasts
2/3 cup vegetable oil
5 Tablespoons lime juice
1 teaspoon (firmly packed) lime zest
5 garlic cloves, minced
1 Tablespoon oregano
1/2 teaspoon red pepper flakes
2 teaspoons salt
1/2 * teaspoon black pepper

Cayenne Pepper


1. Add oil, lime juice and zest, garlic, oregano, peppers, and salt into a large, sealable dish. Mix.

2. Cut the chicken breasts into thirds and then add chicken breast to mixture, turn occassionaly to ensure even coating and flavor.

3. Marinate for at least 1 hour; I prefer to marinate the mixture overnight.

4. To cook, preheat your grill to the correct temperature for chicken breast. ** Once preheated add chicken to the grill and cook appropriately (until proper internal temperature is reached--be careful not to overcook as it will dry out the chicken)

Additional Notes: 

* For a spicier chicken double the black pepper and add cayenne pepper.

** Every grill is different. My Weber grill takes 10 minutes to preheat and chicken is grilled on medium direct heat for 8-10 minutes for an average sized chicken breast. Thicker breasts require a couple extra minutes of cooking and sometimes I will reduce the heat to low.

Most high quality grills will come "pre-tested" for proper cooking times. You may need to adjust slightly, but following their cooking times for select cuts of meat is usually helpful.

Rating: 9/10. The aroma of garlic and the tangyness of lemon make for a delicious chicken flavoring. I will say, though, that most of the success in this recipe comes from a good grill and proper grilling. Joshua loves his Weber grill, and his chicken breast always turns out tender, moist, and flavorful. The ingredients in this recipe just accent what he already does with the meat. :)

We recently were having company over for dinner and I was scheduled to do some grilling. We were out of steaks and salmon so the options were so type of chicken or burgers. Digging through our mountains of recipe resources I got a couple good ideas, altered them some, and voíla! I was a little worried about using lime but I had some wonderfully tart key limes on hand and my mom's marinades with citric juices always tasted good. The end result was far better than expected. This chicken is tender and juicy and bursting with flavor. The garlic, lime, spices, and smokey flavor mingle well and gently fill your mouth with a mouth watering flavor that makes it hard to stop eating.

This recipe really stands out for how tender and juicy the meat is while having a robust and unique flavor. If you are looking for an alternative to typical grilled chicken recipes and you want something with a bit of a tang--but not too much--this is sure to please.
