Judee created this recipe when her children were still at home, because with 6 teenagers in the house, everyone was busy and hungry. What better invention than a quick-to-make casserole that's flavorful and economical?! Judee started with a "cheeseburger pie" recipe, and tweaked it quite a bit to arrive at this taco pie. Once you've tried it, I think you'll agree that it rivals the best tacos or taco salad!
My first experience with this dish was when Judee came to visit us this past Spring. She treated me by cooking dinner one evening, and made this Incredibly Easy Taco Pie. I liked it right away, and have been making it myself! Even Yehoshua loves it... and it's easy for him to eat (unlike tacos). The leftovers are easily reheated in the oven or on the stovetop. I think next time I have leftover taco meat, I'll try making this dish to use it up.
Judee has been cooking for years and loves experimenting with different recipes. She enjoys watching the food network and gleaning ideas to help spice up their meals. We always add sour cream to our scrambled eggs (instead of milk, salt, or pepper!) because of her. Sour cream makes the best scrambled eggs!!
Judee is always one of the first to come to my "rescue" when I can't think of what to cook. She has some great meal ideas and I look forward to sharing more of her recipes on this website!
