Homemade Deluxe Chocolate Cake Mix

Homemade Deluxe Chocolate Cake Mix

A fluffy moist chocolate cake mix recipe -- better than Duncan Hines!

12-16 servings

Cake mix ingredients:

2 cups all-purpose flour
1 3/4 cups sugar
1 cup cocoa
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup vegetable shortening

To make the cake:

1 1/3 cups water
1/2 cup vegetable oil
3 large eggs

1. Make the cake mix by combining the flour, sugar, cocoa, baking powder, baking soda, and salt, stirring with a whisk.

2. Using an electric mixer or a food processor, blend in the shortening until no lumps remain. (Using the mixer on this makes a dusty cocoa mess, so I prefer the food processor!) This is the dry cake mix part, and you can store it in an air-tight container for several months.

3. Finish making the cake by adding the water, oil, and eggs to the cake mix in a large bowl. Mix on low speed until moistened, and then beat on medium for about 2 minutes.

4. Pour batter into greased and floured pans (one 9x13-inch pan, two 9-inch round cake pans, or cupcakes) and bake at 350 degrees.

9x13-inch pan: 35-38 minutes
9-inch cake pans: 30-33 minutes
cupcakes: 19-22 minutes

Tammy's Review:

This is a delicious chocolate cake recipe! It does taste very comparable to a boxed chocolate cake mix -- with a shorter ingredient list. ;) This cake isn't really "healthy", but if you're looking for a regular chocolate cake recipe, this one excels! It's moist, soft, fluffy, and very chocolate-y! My rating: 10/10

I made this cake for my family late last night and couldn't wait for it to cool. My husband and I put chocolate frosting on it and started eating...YUMMO! I used cake flour instead of regular flour. It was a little crumbly so I don't know if its because I over baked, I used cake flour, or we didn't wait for it to cool. Any suggestions? Oh and what frosting did you use in the picture above?

I baked this yummy cake for my husband's 47th birthday today. It was very delicious and will now make a regular appearance at most of our bithdays! Tammy, whenever I make your recipes, I follow them exactly and my family really enjoys every meal. My past experience with cakes has been so-so until now. This cake turned out just like you described. Thanks again for helping me in the kitchen up here in Canada. :)

Tammy, I have to say that you renewed my faith in baking chocolate cakes. I haven't been having much luck lately!! This recipe is great. I added a package of choco. instant pudding and had to add a little more liquid, but it was perfect. I also used your chocolate frosting and my son and grandson loved it. This will definitely be my go tooooooo recipe. Thanks so much. Can't wait to try more of your recipes.

This got rave reviews from everyone!! I made the recipe into cupcakes, I had too many so i froze half of them. They were delicious fresh and from frozen! Thank you!

I made this once before, bomb! Taste fake, like a box cake. Same texture and everything, minus all the chemicals, and unnatural ingredients. I actually try this as a 'base' recipe, and experiment with switching things around, for a soft , moist, yellowcake, for example. As a cook, I know that fats, molasses content, and egg yolks vs whites play a role in moister retaining and distribution, as well as cooking. So proceed (in this nature), with caution. But for what it is solely, better than Betty or Hines!

my husband loves this cake, he said we'll never buy a boxed mix again

My daughter and I made this cake for my mother in law and it was a success!! Everyone raved about the cake....as a treat for my mother in law, I added a 1/2 cup mini chocolate chips because she loves anything chocolate chocolate chip!!!!
