
A hot shredded chicken sandwich filling recipe
4 sandwiches
2 cups cooked chicken, cut into bite-sized pieces*
1 tablespoon oil
1/4 teaspoon oregano
1/4 teaspoon black pepper
salt, to taste
Chicken gravy*, as needed
4 buns or 6-8 slices of bread, for serving
1. Heat oil in small skillet or saucepan. Add chopped chicken and spices. Stir to shred chicken as it heats. Add enough chicken gravy to make a thick saucy mixture (see additional notes for a quick and easy recipe).
2. Serve over buns or bread for a tasty hot chicken sandwich!
*I like to use leftover chicken from roasted chickens for this.
*Make your own chicken gravy by melting 2 tablespoons of butter over medium heat. Add 2 tablespoons flour and cook and stir 1 minute, until bubbly. Add 1/2 cup water (or chicken broth) and 1/2 cup milk. Whisk in 1-2 teaspoons chicken base (or bouillon). Whisk until hot and thick (should bubble/boil for a minute or two).

This is a delicious hot chicken sandwich recipe. It's a great use for leftover chicken, and makes a quick lunch. You can also leave this in a crock pot until ready to eat or for serving at parties; just add additional chicken broth or water so that it doesn't get too dry. :) My rating: 10/10.
