Italian Scrambled Eggs

Scrambled eggs tossed with turkey pepperoni and topped with pizza sauce and mozzarella cheese


4 servings


8 large eggs
1 tablespoon sour cream
16 thin slices of turkey pepperoni
1+ cup pizza or spaghetti sauce
4 ounces (1 cup) shredded mozzarella cheese
shredded parmesan cheese, optional


1. Scramble eggs with sour cream. Fry eggs in a medium-large skillet over meduim heat until almost fully cooked. Add pepperoni and toss and stir for another minute, to heat through.

2. Reduce heat to low. Stir in pizza sauce. Spread eggs across bottom of skillet. Top with shredded mozzarella cheese.

3. Cover pan and allow to heat on low until cheese is melted. Uncover, sprinkle with parmesan cheese, and serve!

This is my favorite morning egg recipe! I absolutely love the flavor of the sauce with the eggs. I first had this at my uncle's house one morning, and thoroughly enjoyed it. We've been making our own ever since! You can adjust the amount of sauce and cheese to your liking. I leave out the pepperoni quite often, and don't usually measure the sauce. :) My rating: 10/10

This is one of the best ways to fix eggs! They are delicious!
I enjoy using other kinds of cheese, too. Yum!


My Dad has decided to go "low carb" for breakfast, so I was looking for high protein breakfast recipes, and this was a hit! All of us really enjoyed it, and my Mom and Dad both said they'd like to have it again! Thanks! :o)


Okay, I was skeptical about these. Not sure why......I guess because I don't like ketchup on my eggs. But these were GREAT! I'll be using this any time I have extra pizza sauce left. Thanks Tammy!
