Spinach quiche

 

Have you eaten spinach lately? :) We like spinach in our salads, and we really love our whole wheat quiche, but we don't generally eat a lot of spinach.

Did you know that a big 9-ounce bag of fresh spinach only has 60 calories in the whole bag? Joshua was quizzing me the other day and it took a long time for me to guess that low. One serving or 3 ounces, which is about 4 cups raw, only has 20 calories!

But look at how much nutrition is in that one serving of fresh spinach!

Potassium - 470mg (14%)
Dietary Fiber - 2g (7%)
Protein - 2g
Vitamin A - (160%)
Calcium - (8%)
Vitamin C - (40%)
Iron - (15%)
Folic Acid - (40%)
Vitamin K - (510%)
Magnesium - (15%)

All that, and only 20 calories! Yum, my body says! :)

For lunch today, I made a Crustless Spinach Quiche. It was actually quite tasty! For my vegetarian friends, or those of you who want low-carb recipes, this might be one to try. We seem to have a shortage of vegetarian and low-carb recipes on this website. ;) But you know where to submit your favorites if you think this site needs more of something. ;)

Is spinach now "safe"?

Remember that huge scare over bagged spinach last summer or fall? Is it OK to buy it now? My husband loves baby spinach and I'd like to be able to buy it again for him.

I think so!

Johanna, I think it is. It's been back in stores for a while now. I'm not sure if the availability depends on where you live. Like all store-bought foods, I suppose there is still a risk. Like eating lettuce at Taco Bell!! Surprised

Spinach is safe

Hello Johanna,

Yes, spinach is now safe to eat again. The FDA has noted that spinach is safe to eat and the CDC only recommended tossing out spinache with a "use by" date of October 1st or earlier. Shipments of spinach were stopped and the source of contamination was found and isolated. While not absolutely certain, it seems the source of the E. Coli outbreak may have been caused by feral pigs getting into the spinach fields. Go figure. There have been no further incidents of E. Coli from spinach since this issue (although there was a minor incident from lettuce, but that too was rectified).

I feel bad for the spinach farmers because there was a big stink over this, but very little promotion by the media to let people know that this healthy food was once again completely safe--and good for you!
