Three-cheese baked spaghetti recipe

A few days ago, I posted a link to a recipe on another blog that I thought looked yummy. Well, I made it! And we loved it! But, as often happens, I had to change the recipe a little. Since I was starting with just a list of ingredients and no measurements, I felt a little creative as I cooked. ;) Since my recipe is somewhat different from the original, I decided to call it Three-cheese baked spaghetti.

When I was making it, I was expecting a so-so easy version of one of our favorite meals. As I was mixing the pasta and cheeses, I tasted some of it, and it was SO yummy! I think I could have eaten the pasta just by itself, before baking. ;)

The original recipe didn't call for the meat and sauce to be baked too, but since my husband doesn't like dry pasta (from being baked uncovered) and I like easy, one-dish baked meals, I decided to make it into a complete "spaghetti and meatball casserole".

It turned out perfectly. At first we thought it might be a little too runny, but as soon as it cooled slightly on our plates, we saw that it was a perfect saucy spaghetti. We tasted it and decided that this is our new way of making spaghetti!

I love that it's a baked meal, since that means I can wash the dishes while the food is in the oven, or make it up ahead of time instead of last-minute, trying to keep the pasta hot and cooking the sauce and meat in another pan.

Served with a green salad and/or green vegetable and some fresh bread, this meal is perfect for a busy night's dinner or for sharing with guests. If I hadn't just featured a spaghetti recipe as "recipe of the week", Three-cheese baked spaghetti would be the coming week's recipe! :)

Tammy, It looks good! I'm glad you liked it. If you ever do it without the sauce on top, cover the dish while baking. I always cover mine and it doesn't dry out.

Thanks for the measurements. I am so used to cooking 2-4 pounds of spaghetti at a time for my large family that I never took the time to figure out measurements.

Mmmm.... yummy! My husband

Mmmm.... yummy! My husband doesn't like dry pasta from baking it, either, so I tend to shy away from baked spaghetti meals, but this looks great. One I'll have to try.

Ruth, thanks for your comment! I completely understand about not having measurements for recipes. Since we have this website, I always measure and write down my recipes (at least one time ;D), but before, many of my recipes were just a list (or even just a mental list!) of things. I still don't do a lot of measuring. It saves dishes. ;)

Ashleigh, the spaghetti wasn't dry at all, so your J might really like it! I know my J did. ;)

I love one pot-baked recipes too! I am definetly going to have to try out this new recipe! Maybe even tonight!

Hubby said, "put this in the rotation"!

I have made spagetti so many ways, so many times. Can it really be improved? Should it? Its so easy, anyway.
As I made this, I thought, Well, it doesnt look real exciting, but how can I really go wrong. As I stirred in the cheeses to the spagetti, I doubted messing with a tried and true. Besides, what if my 8 kids wont eat it?
I was a doubter till I took a bite. It really is a great dish. The cheeses gives the noodles a great flavor and texture. But it doesnt detract or compete with the sauce. The first time we had this dish, Hubby said "This is really good." The next time, he said "this needs on the list!"
A side note, I used EVOO instead of butter, we were out. I used a bit of romano instead of the feta. I didnt bake the spagetti with the sauce, as we some non sauce loving kids.
