This came together in a flash because it contains almost everything I keep on hand. I did use a submersion blender to whirl the pepper,onion and other chunky veg's before I added the salsa and chicken so my one son wouldn't have a fit over the vegetables. He ate it without question. I know it's a little sneaky but I do what I have to do to get my boys to eat vegetables. I added some Monterrey Jack cheese and cheddar to the tops after I spooned them into the bread bowls and returned them to the oven a few extra minutes for it to melt. Just delicious!!
