Homemade granola

In your comment line you state you use golden flax seeds? Do you replace the wheat germ with that? What is the difference in the two? I am new to wheat germ and have never searched out flax seed to even know what they look like.

The granola recipe is pretty flexible (e.g. you can add some extra stuff without it tasting bad!) but I usually include the golden flax seeds in the "optional" ingredients (sunflower seeds, nuts, etc.). Golden flax seeds look like brassy sesame seeds. :) They're better for you if they're ground, so your body can digest them. A bulk foods store or health foods store might be your best route for finding them. They aren't expensive when bought at a bulk foods store; I haven't ever purchased them from anywhere else. You can grind your own flax seeds in a coffee grinder if need be. I buy mine already ground. They have to be refrigerated after they're ground, so they don't get rancid. They're very nutritious and have lots of fiber! In fact, ground flax seeds make a great natural laxative.

Wheat germ... I buy that from a bulk foods store, too. It has to be refrigerated or frozen. There's a lot you can do with it, including adding it to breads, pancakes, granola, muffins, etc. My dad loves vanilla ice cream topped with wheat germ! I'm not sure of all the health benefits, though I know it's good for you; I think flax seeds are even better, but I use both, for different things! :)

Tammy, thank you for answering my questions. We are a fiber poor family. I have been looking for tasty ways to incorporate fiber into our diet. I cant wait to try this recipe with the addition of flax seeds. Also, I did not know that wheat germ could be frozen. Thank you again for this helpful information.

I didn't know wheatgerm

I didn't know wheatgerm should be forzen or refrigerated! It doesn't say that on our packet :o(

It is high in folic acid and vit E. I don't know what else it does but it sure is tasty on plain yoghurt! Love, Lucy x

DeDe, you are quite welcome! :) I know what you mean about the fiber... it seems like we just never have too much! :)

Lucy, I don't know exactly how important it is to refrigerate wheat germ. I didn't know about refrigerating my ground flax seed at first, and it tasted okay but supposedly it goes rancid VERY quickly after being ground. I think I actually read that freshly ground wheat flour should be refrigerated for maximum quality.

I keep my wheat germ and my wheat flour in the freezer, and my flax seed and oil in the fridge. I had my wheat germ go rancid on me once, years ago and learned my lesson!

Another use for flax seed (ground) is as an egg replacer in baked goods. When I'm going to be doing a lot of baking on a weekend, I make up this recipe: 1 cup flax seeds to 4 cups of water. Blend in a blender and refrigerate. 1/4 cup of mix equals one egg. It keeps about 4-5 days in my fridge.
If I'm just doing a quick morning muffin or cookie, I use 1 Tablespoon flax, ground, to 3 tablespoons water and there's one egg!
It works so well, honestly, plus I like the aded nutrition and less fat than an egg.

Refrigeration

I use Hodgson Mill milled flax seed and wheat germ and both packages tell me to keep them in the fridge. I don't do that with my cornmeal, though my mother does. And, I will say that the cornmeal has a bit of a fermented aroma to it. It hasn't had an ill effect on my cornbread or granola, though.

I add these two to lots of things! You can even hide them in chocolate oatmeal no-bake cookies!!!
I buy Hodgson Mill or, if I get to "the big city" bulk and keep in fridge or freezer depending on space.

You can buy ground flax seed at Walmart!

I buy ground flax seed at Walmart. It's with the flours. The brand Hodgeson Mill comes in a box (with a sealed bag inside - I refrigerate it after I open the bag) and it costs under $1.50 for 12 ounces.

It's not organic, but the organic flax seed at our health food store is nearly $9 for 10 ounces, and we use a package a week in baked goods, on yogurt, etc so it was not economical for us to buy the organic version.

Raspberrykitty, I can't remember if wheat germ is with the flour or the cereals (like cream of wheat, oatmeal etc), but I think it's one or the other. The type we use comes in a jar about the size and shape of a peanut jar, if that helps!

I just bought some wheat germ, and it was in the cereal aisle next to the cream of wheat and such.

use of Flax seed

I have been buying my flax seed & wheat germ in bulk when I " have to go to the city" we live in N. California way up near the border of Oregon in the Mountians on the Klamath River in Happy Camp, Ca. Going to town every 3 month's is a trip I wish I did not have to take, it is 2 hours to Yreka (east) then 2.5 hours South to Redding, Ca. That is where I buy my flax & wheat germ and most of my food for my husband and I and our chickens. I use these two item's in everything, from breads, muffins, oatmeal, stews everything. I was diagnosed years ago with IBS which progressed to Colitus and with out Flax seed I would have to take two very strong medications to even think about leaving my home...let alone feel like your in labor and very near to having a child except the pain doesnt stop. The two medications have terrible side effects ( loss of clear vision and can cause constapation ( Man I don't need that :(~ ) I got the Idea for flax seed on-line searching for something to help colitus & IBS and it has changed my challenges with the colitus and my abilty to be more active plus I can see and rarely have to take meds, This wonder seed has changed my life 100%. I would like to grow some of my own ? There must be another way to store large quanties other then freezing, anyone know anthing about storing large amounts or seed to grow your own flax?
