
Joshua and I made these homemade blintzes a few weeks ago. Neither of us had made blintzes before, and I had never even eaten one before, so I was a little clueless about what they were like.
We used a recipe from a cookbook, and the batter was a thin, flour-y, unleavened batter. It got rubbery as it cooked. The sweet cottage cheese and egg filling didn't fully cook inside. When we tried to roll the blintzes after putting the filling inside, they cracked.
They tasted good enough to eat, but not good enough to make again, that's for sure!! I wonder what we did wrong...??

Strawberry Blintzes
We love these things! For a filling I usually just use 1/2 cottage cheese & 1/2 cream cheese sweetened to taste (powdered sugar, stevia, honey etc. I usually use agave to sweeten both in the filling and with the strawberries. We try to stay with the more natural) For the batter, you can just thin down pancake batter and add a little corn starch. I use a small skillet, about 8 inch, pour enough batter to coat and roll the batter to coat the pan. Make sure to cook over medium heat. When I was in college I worked at a breakfast diner and one of the cooks shared this with me. Hope they turn out next time. They are quick and easy and the kids love them.

Thank you so much for sharing your tips!! Our recipe said to cook on one side only, remove from heat, add filling on the cooked side, roll up like a burrito and then brown both sides of the blintz. Does that sound right?
The batter in the recipe we used was basically just flour and water. No baking powder or soda. It was rubbery! :P

I like making blintzes! Although it took me a while to get the hang of flipping them. My family has eaten many ripped and shredded ones. :) The recipe I use has a ricotta cheese/cream cheese filling and a blackberry sauce to go on top... very good! I can send you the recipe, if you'd like.

I just had to add something:) I just love how you and your hubby do this blog and food together! What a wonderful ministry to be working as a team. I realize that you do most of it but it seems he enjoys participating. I also love that you have a waiting pile! We all have to cook so why not make it fun and enjoy it! Awww, thank you, Shorty! :) Joshua does like to cook, and it's only his other responsibilities that keep him from cooking as much as I do. On his days off work, he normally makes at least one thing, and quite often it's a new recipe! :) I'm glad he likes trying/eating new recipes. My dad doesn't like to try new foods, so my mom rarely tries a new recipe! She just cooks their staple favorites over and over. :) Now, Joshua and I have too many favorites to count... :)
