I especially enjoyed this post by Crystal about housekeeping through difficult seasons. I wish I could chalk up my lack of energy to being pregnant, but I'll still be taking her advice to heart. :)
A number of people asked for more details about my "once a week cooking" day last week. I'm hoping to have more on this in the future, since last week was basically a flop... and I've been too exhausted this week to do much of anything.
Last Tuesday evening, I baked a couple things. At this point, I don't think I can even remember what I baked! Let's see... lemon poppyseed muffins, and some cookies. I was thinking that I would get a little head start on my big cooking day. I usually try to bake a couple of things each week for Joshua's lunches. I often freeze part of the goods, but since I am usually "behind" on baking, the muffins, cookies, etc. don't stay in the freezer very long! They're just too convenient. ;)
Anyway, I was up late Tuesday, washing lots of dishes (I remembered why I hate making cookies!) and planning my menu.
Wednesday, I started out pretty well.

I made some burger patties, and put them in the fridge for another day. That was simple enough. Why don't I plan burgers more often? :)

I browned the rest of the package of meat.

I cooked two kinds of pasta in the same water, by cooking one type, removing it with a spaghetti server, and then cooking the second type. I poured the second one through a strainer in the sink like I normally would.

And I chopped lots of veggies. (Those lasted about 4 days!)
Now, all that took me several hours. By then, the children were really wanting my undivided attention. I felt like I had only barely touched the surface, though!

I made some tortilla dough for spinach tortillas. I had the bright (or not-so-bright -- read on!) idea of rolling them out ahead of time and cooking them at the last minute. I figured the batch of tortillas would last us two meals, and I'd cook them fresh each time.
It took me probably 30 minutes just to roll out all the tortillas, which would have been okay, except that I didn't know how to store them. I was worried that they would dry out, so I placed them between layers of plastic wrap, in a stack.
Bad, BAD idea. When I went to cook the tortillas, they had gotten gooey and stuck badly to the plastic wrap. Several of them completely tore apart when I tried to peel them off to cook them. NOT what you want to do after all the work of making them.
The other problem was that I had made them too big for my skillet. After several tortillas with wrinkled, partially-raw edges, I decided to take a knife and cut off part of my tortilla so it would fit. Another thing you don't really want to do, after the effort of rolling them all out.
In the end, I got 4 (yes, FOUR!!!!!!!!) usable tortillas. Can you imagine how frustrated I was by this point??!! :)
Well, the good news is that the steak fajita filling I had made for the tortillas turned out really yummy. I just couldn't believe I'd put all that time, effort, and mess (dishes!) into making 4 tortillas. I'm NEVER putting my raw tortillas in plastic wrap again!! :)
I can't even remember what else went wrong that day, but at 8 pm I had mounds of dishes and truly felt like I had accomplished very little. I was exhausted, and I had spent the childrens' nap time in the kitchen (making tortillas...), so I had literally been cooking all day!
What did I do wrong?!
I'll get better at this... I hope!

Perhaps you could try wrapping the tortillas in wax paper next time.

Don't be so hard on yourself! You prepped a few things and that helped, right? Remember....sometimes doing something new takes time : )
For the record, you have inspired me to plan ahead and prep for cooking throughout the week. I think burgers are definitely in the plan!

Tammy, you sound so like me. I have experimented with things like that and had terrible problems. Hey, you live and learn...now you know what not to do!
I don't know how homemade tortillas would do in the freezer, but the ones that you buy in the store, I just freeze in the bag, while they are all still touching each other....they thaw out in the microwave in about 1 minute or two, and they are easily separated....it might work with homemade too, but I haven't ever tried it.
What I have to do to make sure that the once a month cooking works is....I designate one day to do the shopping...sometimes I'll do a little of the prep work that day too, if I have time.
The next day I designate for the prep work, which would be cooking all the meat, chopping up all the veggies, etc. I debone chickens, etc and put it all in the fridge.
The third day is the cooking day, where I put everything together. Then I put each meal in baggies, or in a casserole dish, and store in the freezer. I don't know if this will help you or not, but it's the only way I can seem to get it done without spinning totally out of control.
Those burger patties are a great idea...I need to make some of those!
How About Batch Cooking?

One other option for oamc would be to do batches of food items. This also helps to save money. For example, say you get a good deal on ground beef, then make several ground beef meals. If you plan on having burgers once a week that month, you could make different mix-ins and have different flavored burgers.
Even if it is a busy day, you can put on a crock pot of spaghetti sauce and bag it up into portions for the freezer. I do this for macaroni and cheese and other goodies too.
Batch cooking helps me break oamc down into more manageable bites. :)It really does go pretty fast too.
There are some really good examples of mini-oamc plans at www.savingdinner.com. Their plans are for sale, but it gives you a good idea of how to do it on your own.

Good tips Carol. Tammy does a bit of batch cooking. She buys most stuff through sales, so we tend to eat in "themes". So if chicken is on sale we tend to eat chicken, when beef is on sale we eat more beef, etc. Tammy also uses the freezer well for such and with things like beef will pre-cook meat balls, ground burger, taco meat, etc and vacuum pack them for future use.

Once week cooking
I talked about this in my blog yesterday. I am TRYING to get it dow to a science, but Oh my there is so much to do on Saturdays as it is. So starting a week for this Saturday since I will be out of town, I am going to just stop whining and do it! Make as much as I can for the week ahaed. I know it will simplify the remainder of the week, and I KNOW it will save waste, which dh and I both hate. Pray for me girls, I tend to be such a slug on Saturdays, my only "day off"

I try to do all my baking
I try to do all my baking say on Friday and all my cooking say on Monday. That way I have time to recover between each of them. Also 2 weeks out of every month I only have to do my baking. (this is great when I stay organized )
Heres what I do the 2 weeks that I cook I make double batches of every meal for the freezer more if it was a super bargain.
So really I only have to cook 2 days a month and I bake 4
