My mom makes great meatloaf.
I never really thought that making meatloaf involved any special skills... I mean, you just dump a handful of this and a handful of that into a bowl, shape it into a loaf, and bake it, right? :)
Well, after trying a number of different meatloaf recipes, I realized that either I was doing something very wrong, or else my mom had some special secret.
So, I pleaded with my mom to tell me exactly how she makes her meatloaf. And while there are no exciting secrets in this recipe, there are a few extra tips (including adding water to the pan before you bake the meatloaf!) and all the details on how she makes her fabulous meatloaf.
My Mom's Meatloaf is easy, flavorful, and moist. I don't consider it to be unique or unusual, as it is just a very delicious, balanced recipe. In the past, my meatloaves have had issues with being crumbly, over-cooked on the outside (but just right in the middle), and way too greasy.
Hopefully, if you've ever had meatloaf problems like I have, My Mom's Meatloaf might be your solution... or at least a start! :)

Meatloaf
Meatloaf is one of those tricky dishes in my opinion. Anything and everything can be added to it depending on your likes and dislikes amd what you've got in the frig or pantry to toss in. I won't eat just anybodys meatloaf. I have tasted some pretty vile meatloaf and never could figure out what in the world was in it that made it so bad. My recipe is very similar to your mothers. I put in a couple shredded carrots and some minced garlic.

You must have ground beef
You must have ground beef to use, huh? I was looking at the meatloaf in the Taste of Home this last issue stuff with sour cream, cheese and stuffed olives. It looks really good and different served with butternut squash.
Something we used to make growing up with ground beef was stuffed burger bundles, you flatten out your ground beef mixture and stuff with homemade stuffing mix and form the burger around the stuffing. You bake it with a homemade cream soup over top.
Swedish meatballs was another way we liked ground beef or poor mans steak.
I know you didn't ask for ideas, but I figured if you were eating alot of hanburgers, maybe you wanted some ideas!!!

I love meatloaf - especially the next day in my sandwich for lunch! ;) I have never found a good recipe - like you, I've had disasters that have been too crumbly or greasy. I look forward to trying your mom's recipe - although I must admit, I'm shocked that it takes 2 hours in the oven! :D I'm willing to give it a shot, though, for a good meatloaf recipe. Thanks Tammy!
Bacon Swiss Burger Meatloaf
I love meatloaf. And since people were throwing in their suggestions, I thought I'd add my favorite variation. Add crumbled bacon bits and shredded swiss cheese to the meatloaf mix, and top it with swiss for the last ten minutes or so. Very yummy.

It's funny reading all the comments, because I've always considered meatloaf one of those super easy, never fail dinners. I've never had issues with mine...but then I've always used the same couple of recipes.
Several months ago I made a huge batch of meatloaf mixture, shaped it into 4 meatloafs, wrapped them in foil and froze them. We finished off the last one from the freezer tonight. Frozen meatloafs make a nice easy dinner without all the mess of mixing it up.

Joking aside, it is so hard for me to tell someone how I made swedish meatballs because I do it sort of as I go! I take the meat and add some breadcrumbs or oatmeal, whatever i have, then an egg or 2, about 1/4 t. nutmeg, 1 t. onion powder apx. 1/2 t. garlic powder, dash of pepper, 1 t. salt and a bit of parsley. I roll them in balls and then I found it is easier to bake them in the oven than fry them, but if I fry them I make the gravy in the same pan. If I make them in the oven, i usually make a white sauce in the microwave and add some spices and a bit of nutmeg, salt, pepper and sme parsley. When meatballs are browned then I place them in a baking pan and pour at least 2-3 cups of white sauce over it and bake for about 30-40 minutes, until meatballs are cooked and tender. Serve with noodles or mashed potatoes.

I love meat loaf and have so much touble making it.It crumbles and all kinds of weird things.I really like a cold meat loaf sandwich the next day with salt,pepper and mayo on bread but I can't get it out of the pan in one piece!I mean just the slices.I will have to try this one.Thanks for sharing it!

The recipe I use is similar to your moms. I don't put catsup in the meatloaf. I use 1/2 cup picante sauce and a tsp. of sage. But everything else is the same as your moms. I also use a 9x9 square Pyrex for my meatloaf and only bake it for 1 hour 20 min. With my gang we do mashed potatoes. Give your mom a big thanks for all her recipes she has shared on your site. Meatloaf is a favorite at our house--I tend to make my recipe up as I go along but right now southwestern is our thing. I add a 4 oz (or more depending on the size of your meatloaf) can of diced green chiles, a pack of taco seasoning, and a good handful of shredded cheese to mine. And instead of ketchup on top I use a can of red sauce. My standard recipe uses about 2 lbs of lean ground beef an egg and some applesauce and bread crumbs ( sometimes other things--depends on what sounds good - I cook like my granny, a pinch of this a handful of that :-) ).
