June 3, 2007 -- Broiled Stuffed Pepper WedgesThis week's featured recipe is a quick and easy summer appetizer: Broiled Stuffed Pepper Wedges! These bell pepper wedges are filled with a cream cheese and black olive mixture, topped with cheddar cheese, and broiled until hot and creamy. I love bell peppers (and cheese!) and thought these were delicious. They also look so colorful and beautiful, and yet take just minutes to prepare! This recipe was submitted by a reader, Nichole. Thanks for sharing such a delicious appetizer with us, Nichole! It's a new favorite. :) My husband won't touch an olive with a ten foot pole! :( Is there a substitution or could I just leave them out? I definitely think you could just omit the olives. Another commenter suggested putting a few minced hot peppers in the cream cheese mixture, which, if your husband likes hot things, might go over well, too! :) I actually made these one day and only had like 1 or 2 olives left (oops!) so they didn't have much olives, and were still good. :D That really looks delicious. I will definitely try it very soon. I love roast peppers but had never thought of doing them this way. These look --drop everything and eat --amazing!!! I can't wait to fix these for hubby when he entertains his friends on guys night. I bet you could use banana peppers for a bit of zip...oh boy is my modification meter running on high gear... AmyG Yum, they look delicious! My fiance doesn't like veggies, so the wedges would be great to make just for myself. I'll definitely have to try them :) Thanks for sharing, Nichole and Tammy! As the picture was loading this morning I was thinking "what is that?"and then seen it was colored beautiful peppers!I love roasted peppers and I am going to try this one very soon!Yummo!
