June 10-17, 2007 -- Vinegar and Oil Salad DressingBetter late than never, this week's featured recipe is one I'm enjoying as we gather fresh lettuce from the garden... Vinegar and Oil Salad Dressing! This is another of my mom's recipes, and I absolutely love fresh garden lettuce, tossed with this dressing! The dressing is flavorful, but light enough that I can eat bowl after bowl of lettuce. One batch makes about 10 tablespoons of dressing, which is plenty for a HUGE bowl of fresh lettuce (12 servings or more!). :) Do you have a source for fresh garden lettuce this year? What's your favorite dressing to use? :) I bet you could. Just be sure to sample before serving. Let us know how it turns out in your review! :-D You're so lucky to have fresh lettuce from your garden! I don't think I've ever eaten green salad that came from someone's garden. My favourite dressing is the classic french vinaigrette: We love a similar dressing, but use balsamic vinegar instead. It gives it a sweet flavor. in a salad for dinner. :) I will have to try your dressing - I love lighter dressings; heavy ones overpower the taste of the lettuce and other salad fixings. My mom always used to make this recipe for a large bowl of the Butter Crunch lettuce she would grow in the garden: 1/2 can evaporated milk Mix all in a small bowl. Add more of any ingredient to suit your taste. Pour over lettuce and toss to serve. As with any dressing, this is best if eaten in one sitting, otherwise the lettuce gets soggy. Coleen, I have never used Splenda, but I've read that it can be substituted measure-for-measure in place of sugar, so I don't see why it wouldn't work in the salad dressing recipe! :) Aline, thanks for sharing your recipe! Want to hear something funny? I have trouble picturing a French salad dressing that isn't red! I was reading your ingredient list, thinking "Where are the red ingredients?!" ;) Vicky, oooh, I love Butter Crunch lettuce!! :) Your dressing sounds good, too. I will plan to try it before our lettuce season is over. :) You're right, that did make me laugh :) :) Well, I actually have a yummy red salad dressing recipe... I'll have to make it and take pictures sometime. :) It has some tomatoes in it, and also paprika. :) My mom's homemade French dressing is reddish, but I think it's all from paprika and no tomato ingredients... :) Have you ever looked in an older cookbook, Tammy, at the recipe for French dressing? It is pretty much what we would call a Vinegar and oil dressing or Italian dressing, not the horrible stuff that is called French dressing now! = ) I love vinegar, we do a very basic oil and vinegar dressing sometimes that is pretty much red wine vinegar, almost twice as much oil as vinegar, salt, pepper and then whatever spices you feel like at the time! I like this on leaf lettuce with grated carrots and grated cheese! Yum! Martha, I guess not! I've never really had/used cookbooks very much... but I like French dressing! I have a recipe that's fairly healthy... I'll have to share it sometime. ;) Here we really like lemon juice, oil, garlic and a bit of salt on our salads. So delicious!! :) I'll have to try your recipe, it also sounds very yummy! ~Tanya Tammy, my 11 year-old daughter made this dressing on a big garden salad to take to my in-laws' yesterday for Father's Day and it was a big hit. We are generally a salad crowd anyway, but I noticed LOTS of second helpings going on! Not to mention my daughter was pleased to try her first dressing recipe. :) Thanks! I just returned from Spain where I spent a semester and went to school. They don't have "salad dressing" like we do here, but they did use something similar to this. All they did was pour a bit of Olive oil and balsalmic vinegar over the salad. I loved it and I bet it tastes quite similar to this. Post new comment |

I would love to try this recipe but can I use Splenda instead of the sugar? Thanks, Coleen
