
Earlier this week, I made this chicken and broccoli stir fry for dinner. I breaded and fried the chunks of chicken breast (much like the instructions for this recipe) and added fresh broccoli florets and sliced onions. I served it over cooked Ramen noodles. (I buy the multi-packs of Ramen soup from Aldi, toss the seasoning packets [i.e. MSG], and use the noodles on occasion.)
The chicken and broccoli was good, but I couldn't seem to figure out a good sauce to go along with it. Something not too sweet, not too soy-saucy, but yet... something to tie everything together...
Any suggestions? What do you add to a stir fry like this, for the sauce part? :)

Hoisin sauce has a very nice flavour and I use it in a couple stir-fry recipes.
orange sauce
I usually make an orange glaze-type sauce for stir fry. A little OJ, honey, vinegar, soy sauce, and corn starch mixed together and then poured into the stir fry the last two minutes or so. It's usually really good!
Stirfry recipe
Tammy try this marinade for your meat next time you want to try a stir-fry. It works well with chicken, lamb, pork or beef. The recipe came from a Chinese cook. It is fail safe:
*approx 500gm of thinly sliced meat add the following-
salt & pepper to taste (I usually use 1/2 tsp salt and a shake of pepper),
2 tbsp of soy sauce (the lighter the color of the soy, the saltier it is), 1 tsp of sesame oil (gives it a lovely smell), 1 tsp or clove of crushed garlic and ginger and 1 tbsp of Cornflour (this softens the meat).
*Mix it all together, if it feels quite dry you can add a splash of olive oil or more soy sauce.
The meat will be quite salty, when you sirfry it separately in hot oil. Once cooked fully take it out of the pan and in the same cooking oil add any vegetables you want. Add 2 tbsp of Oyster Sauce, fry and when cooked, return meat to pan. You can add a splash of water, which will make a lovely sauce because of the cornflour mixed in with the meat. Regards Tonia

Oyster sauce
My hubby does all the cooking and he recommends using oyster sauce, sesame oil, hoisin sauce, lite soy sauce (we use kikkomen lite soy with the green label) cornstarch and water. You can get these items really cheap at an Asian food store instead of the regular grocery store. Or you could do your veggies, throw the chicken in (before breading) and cook it until it's about half done. Pull out the chicken and let it cool for a few minutes then bread it. Through the chicken back in and finish cooking it. Then through the veggies in with it and add some lite soy, corn starch and water mix and it should thicken to a nice lite sauce and your chicken will have that onion and broccoli flavor cooked right into them. Don't have too much fun!!!

Sweet & Sour sauce!
I know you didn't want a sauce that's (too) sweet but I would use sweet & sour sauce anyways...
1/3 cup of white vinegar
1 TB ketchup
4 TB brown sugar
1 tsp soy sauce
2 teaspoons cornstarch mixed with 4 teaspoons water
(pineapple chunks if desired)
Mix the vinegar, brown sugar, ketchup, and soy sauce together and bring to a boil in a small pot. Mix together the cornstarch and water, add to the other ingredients and stir to thicken.

a light savory sauce~
Hi Tammy...I don't care for sweet sauces and heavy soy sauces either, so I fix this one and it is very good.
In a 1 quart sauce pan, heat 1 or 2 tablespoons of peanut oil on medium low. Add a 1/4 teaspoon Sesame Oil. Add 1-2 tablespoons minced garlic. Add 1/2 teaspoon freshly grated ginger root if you like it. (You can add 1/8 teaspoon chili pepper flakes to the oil while it is heating if you like things a little hot.) Let simmer for a minute or two. Take 1-2 cups strong chicken stock and add 1-2 tablespoons corn starch; stir till no lumps are left. Pour into pan and cook till clear. Pour over the meat and veggies just before serving and top it with some sliced green onion tops. The amounts here can be altered to suit your taste....if you don't like garlic, ginger, sesame oil, or hot pepper, use less or don't use them at all. Takes about 7-8 minutes to make. Good over rice too.

I've never had plum sauce (though it does sound good!), hoisin sauce (I think I could make something similar to this, after reading through the ingredient description on Wikipedia!), or oyster sauce (since oysters aren't kosher). We've made homemade teriyaki sauce, but it wasn't as light as I would have wanted for this chicken... I should experiment more with that though! :)

What about a spicy sauce like General Tso's chicken? I have made it before, it is sort of sweet with hot peppers in it!
I cannot remember at this minute how I made it, i looked up a bunch of recipes online and some were confusing! Also I have a good sweet and sour one I like for chicken. You put pineapple in it though!

For the Chicken
* 1 large egg, beaten
* 1/4 teaspoon salt
* 1 pinch black pepper
* 2 tablespoons cornstarch
* 1 lb boneless skinless chicken thighs, cut into 1 inch cubes
For the Sauce
* 2 1/2 tablespoons dark soy sauce
* 1 teaspoon minced garlic
* 1 tablespoon minced fresh ginger
* 2 tablespoons hoisin sauce
* 3 teaspoons sugar
* 3 teaspoons chinese rice wine vinegar
* 1 1/2 teaspoons dry sherry
For the Rest
* peanut oil
* cornstarch, for dusting
* 8 small dried hot chili peppers
* 1/4 cup finely sliced green onion
* 4 cups broccoli florets, steamed
1. Mix together egg, salt, black pepper, and cornstarch in a bowl.
2. Add the chicken cubes; mix to coat, and marinate for at least 15 minutes.
3. In a small bowl, combine soy sauce, garlic, ginger,hoisin sauce, sugar, rice wine vinegar, and sherry for the sauce; reserve.
4. Heat wok over high heat for a minute or so; add about 3 1/2-4 cups of peanut oil to wok, and heat to 350 degrees F.
5. With tongs, remove chicken cubes individually from bowl, dust with 1 tbsp. cornstarch, shaking off excess, and place in the hot oil.
6. Deep-fry chicken pieces for 1 1/2-2 minutes, until browned and crisp.
7. turn off heat, and remove chicken with a wire strainer and drain over a bowl.
8. Pour off all but 1 1/2 tbsp. of the oil from the wok.
9. Heat the wok over high heat for 20-30 seconds; add the chilies and stir-fry for 15-20 seconds, then add the green onions, cooking for 30 seconds more.
10. Add the chicken and cook, stirring, for 1 minute; remove all from wok and set aside.
11. Stir sauce mixture into wok,stirring well, until sauce thickens into a nice glaze
12. add chicken and chilis/onions back into the wok, stirring until everything is well coated, about 1 1/2-2 minutes.
13. Place on platter; and garnish with steamed broccoli florets.
14. Serve with rice.
Easy stir fry sauce
I use olive or sesame oil to cook the chicken pieces.
As for the sauce, I keep it really simple by using equal amounts of low sodium soy sauce and worcestershire sauce (store brand usually does not contain anchovies.I'm allergic to fish). I got this tip from a friend. It's very tasty, contains no added sugar nor msg, and it's economical. I serve it with jasmine rice. You can use fresh or frozen stir fry vegetables.
Fresh Broccoli
We usually just buy fresh heads of broccoli and cut the florets off of it. We do use the stems in some things, like when we fry it in olive oil. The Saucy Broccoli Chicken Bake looks delicious. I will have to put that on one of our menus.
