Enjoying fresh bell peppers

Spicy Sweet Pepper Steak meal

The bell peppers in the garden are huge and juicy this year, and we have as many as we could possibly use. I made some Spicy Sweet Pepper Steak last weekend, a recipe I hadn't used since the abundance of bell peppers last year. :)

The children and I enjoy eating fresh (raw) bell peppers, and of course we chop them and add them to taco salad, ground beef, and chili -- or make stuffed peppers. We also like broiled stuffed pepper wedges. :)

In the meal pictured above, I had made some freshly-cooked green beans, gourmet potatoes, and re-warmed the last three leftover Cornmeal Crescent Rolls. Three rolls just wasn't enough (they're soooo yummy!!) but we consoled ourselves with the yummy cheesy gourmet potatoes, a dish I hadn't made recently. :)

And here is what our meal looked like before we filled our plates! I took a picture of this, partly because it has been a long time since my stovetop was so full of food for just one meal! I was able to spread out some of the preparation of this meal by preparing the potatoes the day before, washing the green beans ahead of time, and having my sister Bonnie chop the peppers, onions, and meat for the stir fry on Friday.

Tomorrow will be another full day of doing tomatoes... so I should get some sleep! :)

That looks so yummy. I have peppers from the market + potatoes my mum gave me from a friend's garden when we went to visit. I think our dinner tonight will be very similar to yours :)

Bell Peppers

Those bell peppers look delicious. Here in Australia we call them capsicums. I am really looking forward to growing some in my own vegie patch this year.

How about

Chopping them up and putting them in ziplock bags in the freezer?I do that and have them all winter long for recipes.

Freezing bell peppers

I've done that, but it seems like the peppers sometimes make the other food in my freezer smell like peppers! Onions have done the same thing, when I've tried to freeze or refrigerate chopped ones... and with dried green peppers, they take up much less space. :)

That picture looks like it's my house. You have a lot of the same pots and pans I have including your dish pattern. Needless to say I feel like I'm at home.

Yum, those potatoes look so good. My hubby won't eat green peppers so they are never in the house. However I like sauteeing red and yellow ones for fajitas (with the meat.

More ideas

They're really good roasted with other veggies, too. Or in chunky veggie salads. (Peppers, cucumbers, tomatoes, green onions, grated carrots, a little lemon juice/olive oil/herbs.)
