Wow! You have ruined commercial pizza for me forever! I tried a few different prep's - since I work out of the home some days, I prepared the dough in the morning and let it sit all day in a warm spot, and I didn't have too much difficulty using it to make two bases when I got home. But I tried something different today - I rolled it out, put it on trays and covered it to (hopefully!) rise all day. I'm sure it'll work out. It was much easier to roll out this way.
