
We had my mom's meatloaf recipe with baked potatoes for dinner today. Meatloaf and baked potatoes is a fairly simple meal to prepare, and the long baking time in the oven warmed our house as we enjoyed watching the falling snow. :) Both Yehoshua and Eliyahu love meatloaf (with ketchup on top!) and since we don't have meatloaf very often, they thought it was a real treat! :)
In other news... this week has been especially consumed with behind-the-scenes work on this website. I'm so thankful to have the majority of the issues resolved, and I'm excited about getting back to more regular, more substantial blogging!! :)

No ketchup for me
When I read about the ketchup I just had to share our little thing around here. Like everyone else 'normal,' my dh eats his meatloaf with ketchup on it. Of course he has eaten a lot of stuff with ketchup on it and I have teased him about it before. I personally hate ketchup and only eat it on hot dogs, hamburgers and mixed with mayo for my fries. Needless to say, I don't eat ketchup on my meatloaf. What do I eat on my meatloaf you ask? Salsa. And because I tease my dh for eating ketchup on so much, he also teases me for eating salsa on my meatloaf.
No ketchup for me either!
I don't like ketchup and never put it on anything. I can tolerate in a recipe, but on meatloaf I do request that it not be added immediately before serving. Of course I don't want salsa on my meatloaf either :P
Anyhow, Tammy's meatloaf recipe (via her wonderful mother) is really good. I recommend it :) I am a pretty picky meatloaf eater. I liked my mom's... but most others haven't impressed me. Tammy's old recipe (not online) was always fairly bland, dry & greasy, and yet was crumbly. To be honest I never requested it and when it was on the menu I always tried to do my best "helpful husband routine" -- "hey honey, are you sure you want to slave away making meatloaf? The house is quite warm. Why don't I grill some burgers instead?" Desparate? Yes. But desparate times call for desparate measures!!
Ahhh but Tammy's mother's recipe... This recipe is moist and dense and has a nice flavor. Depending on the flavor your prefer you may want to add some more spices, but the core recipe itself is excellent. The waterbath keeps the loaf moist and wicks away the grease. This recipe proves meatloaf need not be a vulgar word at dinner time!
Just ketchup?
Eh...I've never been a fan of 'just ketchup' on meatloaf. However, my mom always put a sauce on our meatloaves that was ketchup based...
1 c ketchup
1 tsp of ground mustard
1 Tbsp brown sugar (more if you like it sweeter)
1 tsp of Worchestershire sauce
It reminds me a bit of Stadium Sauce, a red sauce we Milwaukeeans LOVE on our brats at the Brewer games...I lived for them and meatloaf this last summer when I was pregnant. :)
And a trick to making a nummy meatloaf, I've found, is a boxed stuffing mix instead of bread crumbs. It seems to be just the right amount of dry ingredients if you're using beef or turkey (we use ground turkey a lot). If I'm using ground venison, I use Tammy's mom's recipe. :)

Ketchup and menus
Well, I like ketchup and so do my two boys! They like a LOT of it on their food! :P Joshua, you're hilarious! And here I thought you just really liked burgers. ;)

I am not a ketchup lover here either, we like BBQ sauce on our meatloaf!
While growing up my dad would tell gross stories of friends who worked in ketchup factories and maybe that had something to do with it or it was just an excuse! Anyhow, I am sure BBQ sauce could have the same stories.....

Three-Months' Worth of Menus and Potato Wedges
Add me to the list of those wanting to see your listing of menus for three months. I would love to see those with the accompanying recipes. That would be awesome. When do you expect to have that available? I'm just a little bit excited.
I made the seasoned potato wedges (forgot to post that) and they were delicious. My 14-year old son was like, "You made these yourself?" We all really enjoyed them. I have made oven potatoes before but they did not have the flavor of your wedges. I will definitely make them again soon. Thank you, Tammy.
