This morning, as soon as breakfast was over, and Ruth was settled peacefully into her car seat, I had the boys help me make banana bread. The too-ripe bananas had been on our kitchen table more days than I planned already. ;)
Eliyahu and Yehoshua were great helpers, and in no time at all, we had two loaves of banana bread in the oven. I was glad to have the bananas used, and we are enjoying the fresh banana bread!
My mom called this morning, and offered to take both Yehoshua and Eliyahu out grocery shopping with her... and pick up some groceries for us, as well! You can probably imagine how excited I was. I guess after a couple of weeks of being at home every day with all three children, it just felt nice to have a break. :)
Ruth slept for about half of the time they were gone, and I worked at break-neck speed. ;) I cleaned out the fridge, cleaned the bathroom, and made Vegetable Bean Soup with Spinach. This soup is one of my favorites. I just love the flavor; I love how healthy it is, and I love how healthy I feel when I eat it! We have a bit of leftovers from this pan of soup, since I also made baked burritos (tortillas filled with cheddar cheese, rice, and taco meat) to go with the soup. :)

Banana Bread
I actually made this banana bread last week for a shower and yesterday for my family and bible study. It has gone over great everywhere I have taken it!
Recipe feedback
The bread and the soup both look lovely. Your happiness really shines through your writing and it leaves me with a happy feeling too!
I have tried three of your recipes the past few days. The Salisbury steak and the Chicken lasagna both turned out wonderful, thanks for posting those recipes! I had never eaten Salisbury steak, but it was gorgeous. The idea of a white lasagna I really liked and it was very tasty.
However I also tried Easy lasagna and while the taste was very good, I felt there was not enough liquid as there was no white sauce, just cheese. The amount of cottage cheese and mozzarella was not enough for me to fill that many layers. Maybe I converted the American measures wrongly. Or maybe you make a very liquidy meatsauce? I made a homemade tomatosauce to go with the minced meat. The recipe was great as long as I added a homemade white sauce (based on a little butter, flour and milk) to the cheese mixture.
This site is full of informative advice and great recipes. You both have done a great job!
Have a nice weekend, Sofia
A Mom's "Break"
I love the way you considered it a "break" to work at "break-neck" speeds to clean while you had the chance!
Your website is a great inspiration to me. I hope you never get too busy to keep posting.
