Another warming baked lunch

Saucy broccoli and chicken, served with asparagus

Our weather is still fluctuating between warm and pleasant, and downright cold! I'm taking advantage of the last few days (weeks?) of being able to bake casseroles to take the chill out of the house. :)

Lunch today was saucy broccoli and chicken, and some fried asparagus on the side. I'm drinking a cup of hot Yogi Echinacea tea, and then I'll start washing dishes in some hot water. :D

Oh, and if you haven't already requested a free sample of Yogi tea, you can do so on their website! I really love their herbal teas. Our local Big Lots store carries them on occasion and they're such a treat!

Mmmmmm that broccoli chicken bake sounds real good!! I think I'll ve trying it. When you make a pan does it yield leftovers? I'm asking cause my fmaily is bigger and just kind of want to know the quantity in case I have to double it!

Our family can get 2 good meals from the broccoli chicken bake recipe, so I'd estimate it makes about 8 large servings. I'd say that the recipe as-is should be enough for one meal for your family... maybe try it once and see if you like it! Then the next time, you could make up two dishes, and bake each one separately for a dinner (i.e. eat one on Monday and one on Wednesday or something like that). :)
