Scrambled Eggs with Tomatoes and Pastrami

Cheesy scrambled eggs tossed with diced tomatoes and turkey pastrami


1-2 servings


4 medium eggs
1/2 t sour cream
3 thin slices of turkey pastrami, chopped
1 medium roma tomato, diced
1/2 c shredded cheddar cheese


1. In small bowl, scramble eggs with sour cream.

2. In a skillet over medium heat, start cooking eggs. When eggs are almost done, add pastrami and tomato, stirring to mix.

3. When eggs are fully cooked and tomatoes are warmed, stir in cheese. Serve as soon as cheese melts.

I love how the eggs, cheese, tomatoes, and turkey pastrami combine to give a yummy unique flavor. When I have fresh tomatoes, this is one of my favorite breakfasts! My rating: 10/10, because I just love the combined flavors of cheddar cheese, eggs, pastrami, and tomato!
