Almond coconut granola for breakfast

After weeks of buying cold cereal (even at cheaper stores or in bulk at Costco) I am convinced that my homemade granola is more affordable. Please don't ask me to do the math... I'm not a math sort of person. :P :)

Anyway, I refused to buy any more cold cereal for the children and me, and the last empty bag prompted me to get busy and make some granola! :) This Almond Coconut Granola is really easy to make, and kept our house warm and smelling nice while it baked! :)

I can make your Cinnamon Crunch granola for $1.75 a batch--and that's 3 weeks worth of granola. ;-) Very thrifty indeed!

That is our favourite here

We do not buy much cold cereal, it is just to expensive. We eat hot cereal about 5-6 times a week and granola is a favourite here. I love the smell of it baking too. Yummy!! ~Tanya - mama to 5 :)

We just went through a run of cold cerel, they were 1.50 a box at our local store for a name brand cereal. Most of them were sugary ones except Rasin Bran. We had stopped buying cereal regularly for some time and it was a real treat for the kids, but with 8 they can go through 2-3 box in a sitting. I have not made my own granola for cereal and I need to start doing that, Hopefully this weekend. We have bought it in the bulk section of our Winco and most of my children like it. So I am sure they would like to home made.

iron?

That sounds so good! I've been buying cold cereal for the first time since getting married this past month because my iron levels are really low (I'm 8 months pregnant) and All Bran has a ton of iron in it. Anyone know of other ingredients one could add to a homemade cereal to boost iron content?

Blackstrap molasses?

Maybe drizzle some blackstrap molasses on top?

Iron in cold cereal

You can make granola using some blackstrap molasses for part of the honey...

However, I think there are other good ways of getting iron... besides eating leafy greens and all that, there are more natural supplements to help boost iron. Someone mentioned chlorophyll, and that is what I took during pregnancy. I've heard great reviews of Floradix, as well. :) And, like someone else mentioned -- the vitamins and minerals in enriched cold cereals aren't always absorbable, anyway... :)

Oh, and one more -- cooking in an iron skillet! :D Well, there are many more ways to boost iron... use Google if you want more ideas! :D

What kind of cornmeal do you

What kind of cornmeal do you use? Whole grain or just normal stuff. I'm wondering how hard the whole grain stuff would be in this. My husband has a tooth that needs crowning and cornmeal makes me nervous till it's done. But I really want to make it!

I hope you don't mind me answering this, (this was one of the first recipes I submitted to Tammy) Anyway, I have made this without cornmeal and it turned out great. I did add some wheat bran instead.

I think any kind is okay...

I think any kind is okay... I have used regular cornmeal from the store, and in my last batch (in photo above) I used corn flour that I had ground! It still turned out great. :)

We love granola too and I can't wait to try this recipe. I think I'm going to stop buying cold cereal too. Well, except rice crispies...can't really make rice crispy treats for hubby with out rice crispies.

cornmeal

We grind popcorn fresh to make cornbread and cornmeal cereal. If you have a grinder that can handle it, this would allow you to grind it as fine as you like. Popcorn is pretty cheap (you might even find places that supply movie theaters, ect), it stores well and flour made from it is healthier - most cornmeal is de-germed to give it a longer shelf-life. Popcorn flour has a richer taste and I think it is a little more moist.

Re: Iron?

I don't think the iron in store-bought cereals is all it's cracked up to be - have you ever tried rubbing a magnet around in a bown of crushed wheaties? It doesn't seem natural if you can see it like that!
I like to use liquid Chlorophyll (usually derived from alfalfa juice)(a tablespoon before each meal) or powdered greens (like barleymax from www.hacres.com) for my iron - those don't make me sick like iron supplements and they contain trace minerals that help with absorption. Also watch that you drink enough water. Dehydrated blood cells don't re-hydrate, they have to be replaced. That increases your need for iron.

Sugar Free Idea

I did not use this exact recipe, but a very similar one in the past. To keep it as sugar free as possible, I used the sugar-free maple syrup instead of honey and it turned out great.
I loved how easy it was to get some good grains into the family. We serve it over plain yogurt with a drizzle of syrup. Yummy.

I'm interested in this

I'm interested in this granola idea instead of cereal for breakfast...however, I'm confused....can you use the granola in place of cereal??? I mean...pour milk over it and everything?
I just sort of thought granola was for eating dry or putting over yogurt.
Can some of you tell me what you use granola for??

Yes! :) We pour milk over it and eat as cold cereal. :D

cereal AND granola

We love to eat granola every day as our main cereal - and we use it for snacks and dessert too! But if we get bored, we love to add a "honey bunches of oats" type cereal or flakes of some kind, etc. That stretches the granola and makes the cereal more filling, so one bowl is enough. Yum!

Oats in the Granola

Has anyone ever tried old fashioned rolled oats in this recipe? That's usually all I keep in my pantry. Is there any reason the cereal wouldn't turn out correctly if I didn't use quick oats?

Sure, you can use rolled ("old-fashioned") oats in the recipe. I actually did that in the batch I made this week (in the photo above).  I think it doesn't get as clumpy, but it's still yummy! :D

Whole Grain Rolled Oats

This recipe looks easy and really yummy as well! Since finding out I was pregnant, one thing I've been big into is cereal, mainly granola...not sure why, but it works for me. However, it doesn't work so well for our grocery budget. I'm going to buy the ingredients and give this a try! Thanks for the recipe.

We are still workig on the

We are still workig on the weaning off of cold cereal! My boys love certain cereals but are not opposed eating the granols instead. In all honesty homemade granola is virtually the same as some of the
"healthy" store bought Muesli. It is not unusual in areas of Europe to eat granola style cereals with yogurt or milk. When my husband was in Sweden yogurt was used in cereals instead of milk and granola was not just sprinkled on top. You took a bowl of Granola/Muesli and topped it with yogurt. We sometimes use molasses as the sweetener when we make yogurt. It isn't too often as I have to be careful wiht my iron levels as they are naturally pretty high. Even right after child birth they range within the normal to high level.
With cross country ski/biathalon training in progress right now I have two hungry teenage boys that eat food like most of us breath air. Right now I am making a double batch of granola a week but 8 loaves of bread and quadruple batches of pizza to keep them fed. I really appreciate having another granola recipe to supplement what we are already making!!!

Homemade granola

I just have to say that I have searched and searched for good granola for probably 6 months now. I have read your blog faithfully for along time. I made the granola and love it so much! I highly recommend it. I do make alot of your recipes. I gave some to both of my daughter's and their husband's and grandchildren. They all love it. I cannot eat enough of it. I love to mix it with yogurt and apples and I put craisins in mine. So so good Tammy, thanks so much for the recipe!

great granola

I made this recipe this weekend. It was Great. My 16 year old son who is very picky and loves junk food, ate this and loved it. He loves to eat cereal from the box and now I found a cereal I can control what goes into it. I love granola and this was perfect!! Everyone who has tried it has had nothing but praises about it. Tammy keep the good recipes coming my family loves home cooking.

cheaper?

I think granola is kinds of expensive by the time I buy the oatmeal, wheat germ, coconut, honey, nuts and raisins. Even so, I think it is worth it...it's so much more filling and satisfying then cold cereal, and much healthier!

Sounds yummy!!

For Granola I use dried and sweetened okara (the bulk that is left over from making soymilk) added to the oats, an inexpensive way to increase the protein content. You can also make the syrup using 2 cups sugar,replace some brown sugar if you want a deeper flavor, pour in 1 cup water, Boil,cool, add flavorings-real vanilla? maple flavoring? Up to you. We love cinnamon so I ususally sprinkle some over the oats before it goes into the oven. Add the nuts and dried fruits of your choice.

My breakfast lately consist of half a pear,chopped with a variation of this granola topped with yogurt made from homemade soymilk. Delicious,healthy and filling.

To your original question-I use the large cans of green beans for a huge three bean salad-chopped onion, green and red peppers, dark red kidney beans, dressing of oil, vinegar,salt, pepper and sugar.
