Along the lines of "taco meat makes good chili, and leftover chili makes good chili cheese burritos", Savannah emailed me her Chili Marathon:
Day 1: Make Chili using your favorite recipe. Brown beef & seasonings on stove top, then combine remaining ingredients in crock pot and cook on high for 2 hours. This week I served my chili with the traditional saltines and cheese but instead of using sour cream, I made a salsa with avocado, red onions, parsley, lime juice, salt and pepper. It was DELISH!
Day 2: Boil pasta spirals or large pasta shells, drain and immediately add back to pot with several large scoops of cold chili. If you like spicy food, add a few dashes of hot sauce. Turn heat up to medium and add lots of shredded cheddar cheese. Once hot, top with diced onions and more cheese. (You can use any pasta you have on hand but the recommended pasta hold more sauce, thus making each bite hold more delicious chili flavor.) We call this 15-minute masterpiece “Chili Mac”.
Day 3: Reheat left over chili and serve over large baked potatoes with salad on the side. So Easy!
Day 4: Microwave hot dogs, place on buns and top with chili. So Easier!
All of the above meals are great on their own or served with a side veggies (frozen, canned, or fresh) or a green salad.
We love chili (our favorite is my mom's recipe!) and usually have at least two different meals from it -- served in a bowl with sour cream and cheese, served in flour tortillas, or served over nachos. I also find that chili freezes really well (I use an empty quart-sized yogurt container) and thus makes a great meal to pull out of the freezer on a busy day! :)

I LOVE chili dogs! My husband likes it over a bowl of rice.
Chili Soup!
I often use the last couple servings of chili as a base for soup. I usually have a couple spoonfuls of rice leftover too since I usually serve rice with my chili. I put the chili and the rice in a pot and add a quart of chicken stock. If I have any other left over veggies that would accompany it well, I throw those in and sometimes even leftover macaroni or other pasta. Top it with some freshly chopped cilantro and it tastes like you made it fresh! Serve with cornbread or other homemade bread.

Seriously, this is a *great* idea!!
The next time I put together a pot of chili, I'm gonna double it (at least) and have a chili-a-thon that week. We like all those meals - I especially like the idea of a chili-mac meal, yummy!!
Thanks for this idea - we just recently found a GREAT chili recipe - although it *is* a bit lengthy and time-consuming. If I just double it up and use some of these ideas, it'll be time well spent~

There is no better way to eat chili then with fritos. We call it chili pie. Put some fritos in a bowl then top with chili, cheese, onion, and shredded lettuce. Love, love, love it. It's esp fun if you're having a party or something and you buy a box of individual bags of fritos. Just cut the top off of the bag and put the ingredients directly into the bag. Kids love eating out of the bag.

I just made chili yesterday for a couple meals this week! today we are having nachos with chili and salsa. i let this cook down quite a bit, its pretty thick. We like it with Doritos, cheese. Then the chili is for Wednesday for my hubby while me and the girls go to church.
We will also have chili dogs probably in a couple weeks. i will freeze the leftovers.
Chili is so good, very healthy, we put lots of beans in there.

We usually start not with chili, but fajitas. The leftover meat and veggies (I usually make extra) are chopped up smaller and added to beans (and more veggies usually, sometimes more meat). Then we have chili. Then we have "bean dip" with chips and cheddar cheese. Then we have fried burritos. :)

The chili and chips look yummy! I love chili, albeit vegetarian chili but I don't think I can eat it for more than 2 days in one week.
I will make chile one day and then use it as a topping for baked potatoes on another day later in the week.

Chili Cheese Dog Pizza
We use leftover chili on PIZZA! Brush olive oil on the dough, cover with leftover chili, sprinkle a few cut up few hot dogs, top with cheddar cheese (and onions if you like them) and bake! Drizzle with mustard and serve with a salad for a very filling meal.
I make pizza every Friday night and if we have leftovers from meals throughout the week, we experiment with them on one of our pizzas (that's how we discovered chili cheese dog pizza). It's a great way to use up leftovers and a great way to find new tastes for pizza : o)
