Earlier this week when I wrote about the way we use corn tortillas for soft tacos, I promised a recipe that involves those delicious corn tortillas! :)
We recently visited friends whose mom is Mexican. Since we were there for 2 days, we got to enjoy some wonderful Mexican food (she is a great cook and hostess!).
Perhaps surprisingly, what sticks out in my mind most was the tender, perfectly salted cooked pinto beans that were served to us. I fell in love with simple cooked pinto beans!
Well, after buying a 25-pound bag of pinto beans at Costco a few weeks ago, I've been enjoying experimenting and eating them! I have complete details on cooking dried pinto beans here.
One of our favorite easy creations has been these Simple Bean Tacos. They look innocent enough, but...

...they are full of flavor! Tapatio is our hot sauce of choice. So delicious and really not so very hot at all.
Another Costco treat is Darigold Sour Cream. We can taste the difference compared to Aldi's sour cream, in a really good way. We looked at the ingredients:

Cream and enzyme! No wonder it's so good. :) Thankfully, Costco sells a 3-pound container for under $4. The Simple Bean Tacos get dipped in sour cream between bites... so yummy!

we love Daisy sour cream because it's purely cream without anything added but I'm happy to know there is another cream out there without bad additives and yet includes an enzyme! Thanks!
As a kid, I thought beans
As a kid, I thought beans were gross, but somewhere along the way I started to like them. . . even the smooshie varieties. Do your kids eat these? They look so good!
I'm not a hot sauce person, but my husband keeps a bottle of Texas Pete which originated locally here in NC, not in Texas ironically.

Yes! Actually our children all like beans. Ruth especially likes the pinto beans sprinkled with a little cheese... she gobbles them up! Both of my boys love to have little handfuls of the cooked beans when I am making them... and of course then in our food for dinner. :D
I have to admit
I'm a chinese food junkie. So we have a HUGE bag of the small packets of hot sauce. I use them when baking chicken wings or for use in chili or something. Since I get pretty bad heartburn, I have to take it easy on the hot sauce anyways. So the packets are absolutely perfect!
For company, I'll set out a bottle of Crystal hot sauce.
Pinto beans, I'll use the brand Hanover. Sour cream, MUST be Breakstone.

Pintos are my favorite type of beans (though black beans rank pretty high to) so this post really appealed to me.

The beauty of Mexican food is it's simplicity! These tacos are similar to ones I learned to make from a dear friend who is Mexican. Our family likes the Tapatio too--great, fresh flavor!

I am making tacos today! I don't use beans though my husband hates every kind of bean except green. I cook them for myself and kids once in a while. My mom used to make her own tortillias and beans and wow they were good, she also learned from a mexican family. I have not ever mastered flour tortilla! I buy the corn ones and in olive oil I fry them to crunchy and add a bit of salt.They are usually in large amounts and I bag and feeze them in 10 per bag servings they reheat fine if you plan to do the frying thing. I used ground turkey today for taco meat - it is healthy and less expensive than beef. I added fresh chopped celery, onion, diced tomatos, and will top with cheddar and leafy salad. I made some rice too. I wonder if some of the cooking can be done in a slow cooker next time?

As far as beans the only beans i eat are green beans
and only if they are in cans from the store.
I can't stand home grown green beans.

Besides dipping them in sour cream do you serve any side dishes with them?
My oldest does not like cheddar cheese so I am going to make them with white cheese and see if he will eat them.

I would serve either a lettuce salad or a cooked vegetable with the bean tacos, and some fresh fruit if we have any... :)
I almost always serve at least one green thing, even if it's just some cooked peas or green beans! :D

These look yummy! I usually buy the store brand. We don't have a costco, only a Sam's club. Where do you buy that hot sauce? I usually buy red hot, it has .50 cent coupons that double and make it free at Kroger. My husband thinks it is just hot and not flavorful!

Sour cream
Kroger has a brand of sour cream that is Natural that is only cream, milk and enzyme.....it is really good! We love Tapatio hot sauce too! Lately a nice thing we have been doing is cooking pinto beans with garlic cloves. Then we season with salt. Serve topped with grated jack cheese, tapatio sauce, chopped tomatoes and sour cream if you want and jalapenos if you want it spicier. It is really good and filling!

I'm going to third the recommendation for Daisy sour cream. It's the only kind we buy. Even the reduced-fat doesn't have anything weird in it.
Where to buy dried beans inexpensively
Where can I find dried beans for a good price? We mostly eat garbanzos and black beans around here. Whole Foods has organic black beans for $1.99 for 16 oz; does anywhere beat that price? Trader Joes nor Costco seem to carry them. Thanks!
I buy dried beans in bulk
I buy dried beans in bulk and in the past have gotten them from an Amish bulk foods store in Ohio, a health food co-op from Michigan, and Costco. I haven't bought black beans or garbanzos for a while though.... I think the less commonly eaten ones are more pricey! I got 25 pounds of Pinto beans at Costco for $13.99... they seem to be fresh and good quality (clean, even!). :)

I get Daisy sour cream for myself and the kids because it has no additives and it's inexpensive, but I buy Tillamook for my husband because he likes the consistency.
