This week's Recipe Swap theme is pumpkin! I love cooking with pumpkin. :) I have so many favorite pumpkin recipes, but I'll try to be somewhat brief and not mention too many different ones. ;)
The boys and I recently made pumpkin pancakes! These Whole Wheat Pumpkin Pancakes were so tender and moist. We ate most of them hot off the griddle, without syrup. Such a comforting Autumn breakfast on a chilly morning! :)

Pancakes are easy to make and I had two very willing helpers! Yehoshua is quite capable in the kitchen, but Eliyahu on the other hand is just finally outgrowing the "Can't control my wild stirring!!!!!" stage. ;)
These Pumpkin Dinner Rolls are my staple Thanksgiving dinner bread/rolls. :) The pumpkin gives them a beautiful yellow color and when they're hot and fresh, spread with butter, I could forget the turkey and just eat these rolls. :)
Pumpkin Sheet Cake with Cream Cheese Frosting is simple, beautiful, and delicious! The sheet cake size (made on a jelly roll pan) makes it easy to serve to guests. :)
Pumpkin Butterscotch Muffins are really sweet, like cupcakes, and another favorite! Last week I was craving these muffins but didn't have butterscotch chips. I made them anyway, poured the batter into cake pans, and frostened with cream cheese frosting. Yum! :)
Pumpkin Cheesecake! Joshua made this and it's a delightful seasonal cheesecake! I love Joshua's awesome cheesecakes. :D
Roasted pumpkin seeds are good for you, and a great way to use something you might otherwise be tossing into the compost! :) These seeds never last long here... I love them!
And last (for now!) is Cream-Filled Pumpkin Cupcakes. I'm not sure how to describe these besides "YUMMY!!!" They're a fun treat. :)

I would like to see you make pumpkin tortillas. I think with the other goodies you have created you would do quite well with these and I think the would make good wraps too, maybe with a few roasted pumpkin seeds..... Now I am getting hungry.

Pumpkin is my very favourite thing to bake with!!! Here is a recipe for Pumpkin Cream Cheese Muffins. These last maybe 4 days in our house. I made a bunch in my mini muffin pan this time too, they were great for my little one who can't have a whole muffin!

I can't wait to try some of these recipes! I was blessed with a huge pumpkin crop this year! I think we'll be eating pumpkin until next October! But we love it, so it won't be too much hardship!

Tammy: I want to try the pumpkin dinner rolls tonight but I don't have any wheat germ in the house. Can I leave it out without ruining the recipe?

Kristin, yes, you can definitely make these rolls without the wheat germ. :) You could just leave it out or get creative and use something like cornmeal instead. :)

What a great recipe! The rolls were a hit. I actually halved the recipe since there are only three of us and I didn't think we needed 48 rolls! I'll be making these for thanksgiving dinner too.
