
The past week has seemed a blur. On the verge of fully recovering from colds, we caught the flu last Friday. It seems that "catching up" on anything, blog or email included, just hasn't been visible on the radar these past few weeks... or months!
In all, we're really doing just fine. :) As much as I haven't been available to do as much blogging as I'd like, I have been making myself available to my family. :) We're getting into a good groove with homeschooling. Dinner is on the table (usually 20 minutes late! heehee) every night, and by 9pm we're all snuggly tucked into our beds (usually). :)

I'm still waiting for that second-trimester burst of energy to kick in. I haven't posted any pregnancy updates this time (though I really should get a picture!) but if I had, they'd all be along the lines of "Just plugging along... not feeling the greatest... I was planning to do x, y, and z, but I'm falling into bed instead!" :) Joshua has stepped up to the challenge and helped with lots of meals and after-meal clean-up, and given me plenty of naps while he watched the children. Such a blessing!

This honey ginger chicken stir fry was beautiful and I liked it, though it didn't get rave reviews from the rest of the family. ;) I did save my notes and maybe eventually I'll try again with some tweaks!
I love fresh ginger, but don't have enough recipes that use it. What are your favorite ways to use fresh ginger root?

Fresh Ginger
1. Didn't know you were pregnant again! I hope you get to feeling better.
2. I use fresh ginger in ANY recipe calling for ginger--even if it says powdered ginger. [It may make it too strong a flavor for little ones though]. Everything just tastes better with it. All my Chinese recipes--we love stir-fries, terriyaki, etc and I make them from scratch (no commercially prepared sauces except the basics like soy sauce or sesame oil]

Chicken soup
When I'm making chicken soup, especially when we're sick, I think the more ginger the better. Onion, carrot, celery, tons of garlic, a bunch of ginger, a squeeze or three of lemon, and a moderate amount of chicken, with quinoa instead of noodles. It's like heaven.
Expecting Too!
We are expecting our seventh in June. We are early on. The morning sickness and being tired makes everything a little more difficult. They are worth it when it is all said and done though. I just ease up on my requirements for the others as far as their homeschooling goes, on the days I am feeling a little less energetic. Congratulations on your new addition!!
Also I have always had morning sickness with all of them, so I usually just grate some ginger on anything I am making. Nobody else in the family seems to mind and it makes me feel a little better.

I am pregnant as well and due 5/14/10.
I made this salad dressing last night and it came out really nice! (It tastes like the dressing on the salads they serve at Japanese hibachi restauarants.) Very tangy! Mmm.
1/3 c Salad vinegar;
3 tb Soy sauce (I used tamari instead)
1/3 c Chopped onion
1/4 c Finely grated carrots
1 ts Celery seed
1/2 c Canola oil (I used ev olive oil)
1/2 tb Sugar; or to taste (xylitol)
1 ts Minced fresh ginger root

Combine all ingredients in food processor or blender, processing on high until veggies are finely minced. Cover and chill thoroughly until ready to serve over salad.
Thankfully, I am blessed to have a vitamix and just through everything in large chunks and it did the rest. :)
ginger root
We keep a root in the freezer. It probably isn't the best way to store it, but hubby LOVES to use "real" ginger when making stir fry and egg rolls. We live in the midwest, and well, ginger root is hard to find, expensive, and when you do find one, it is hard to find one that looks at all usable and safe, so we make sure not to waste a single bit of it.

I worked at a health food store and they made a frozen lemon aid with ginger it was very good lemon aid with a kick. To make at home I would just trow some ice ginger root and lemon aid in a blender and blend, good in the summer months. There was a post that she's expecting when she was in ohio with family go back and read and you will find it. Congrats Again I'm sure the gingers helping with the morning sickness.
