I made this for a late Sunday lunch/dinner yesterday. My family thought it was delicious and I was elated over how inexpensive it was. It fed hubby, myself and our three young daughters a hearty lunch, with enough left over for a lighter lunch the next day! Last minute I realized my only onion was rotten, so I subbed with onion powder...turned out fine!
