Oven-Baked Potatoes

Tender buttered baked potato wedges seasoned with parsley and paprika

Yield: 

4-6 servings

Ingredients: 

4 large red or "butter red" potatoes
3 T butter
salt
pepper
paprika
parsley flakes

Instructions: 

1. Scrub or peel potatoes, and cut into chunks. Place potatoes in a greased 8" x 8" baking dish.

2. Sprinkle seasonings over potatoes. Slice butter and lay on top.

3. Cover dish with foil and bake at 325 degrees until potatoes test done with fork. (About 2 hours, depending on the size of your chunks.) Stir once during cooking.

I like to prepare these potatoes and pop them in the oven beside my oven-roasted chicken. They're easy to make, and better than plain baked potatoes, in my opinion. However, they're still just... potatoes... which is why I rated this dish 7/10. :)

A nice variation on potatoes and much better than a dried baked potato (7/10)

This is yet another very good side dish. Not something you would want to eat alone, but it makes a great accessory to chicken and steak. They tend to be moist and tender with a nice subtle flavor. They are a great alternative to a large backed potato (which you cannot possible at as a side!) and is a lot more tender.
