Tammy's Chicken Rice Bake

Flavorful seasoned rice baked with chicken breast

3-4 servings

2-3 large boneless skinless chicken breasts
3/4 cup rice
1 1/8 cup milk
1/8 teaspoon paprika
1/2 teaspoon garlic salt OR 1 small clove minced garlic + 1/4 teaspoon salt
dash lemon pepper
dash black pepper
3/4 teaspoon dried chives OR 1 Tablespoon minced green onions
1 Tablespoon dried onions OR 2 Tablespoons fresh onions, chopped
1 teaspoon chicken bouillon

1. Grease a square 8-inch glass baking dish. Rinse chicken and lay in the bottom.

2. In mixing bowl, combine all other ingredients and mix well. Pour over chicken breasts.

3. Cover with foil and bake at 325 degrees for about 90 minutes or until rice and chicken tests done.

I really enjoy the flavor of this dish. I like to eat bites of the chicken with the rice. It's so tasty! And when it's cooked just until done (not over-cooked) it's so tender, too! But maybe the best thing about this meal is that it's super-quick to prepare. It can even be gotten ready the night before and refrigerated. I created this recipe because most other chicken and rice bake recipes call for canned cream of chicken soup (either you buy the canned stuff with MSG, or make your own which is time-consuming). Good flavor plus easy to make--I rate this recipe 9/10.

Perfect after a busy day
I got home earlier tonight and wanted to make your Farmhouse Chicken but didn't have the time to cut up the veggies, make the stuffing, etc., so I opted for this meal as I could just put it in the oven and do some housework. I made a few changes. I doubled the rice. chicken, liquid, and seasonings so there would be enough for our family. I'm thinking I may try broth next time instead of milk, but the milk worked out fine. I did not have any chives but added in thyme, sage leaves, and a dash of garlic powder. Used seasoned salt instead of paprika. I could not find mine in my spice cabinet. It was delicious and we really enjoyed it. I steamed some broccoli, made some biscuits, and we were good to go. Perfect for a lazy Saturday
I didnt feel much like cooking tonight but as I was browsing recipes, I realized that I had all the ingredients for this and it seemed simple enough, so I made it. It was so good for something so simple! It will definately be repeated here at the K house.

Tasty!
I'm giving this a ten because it was easy AND it tastes great! I usually dread chicken recipes because I tend to dry out the chicken or it just doesn't end up with enough flavor, but this one is perfect! We will definitely be making this again :)

Great!
We needed a rice meal last night so I thought I would give this recipe a shot. I doubled the recipe because anything made in an 8X8 pan is not enough for my family. It turned out perfectly and tasted wonderful. Some stir fried green beans and whole wheat flatbread on the side and the family was very happy. I will be putting this recipe in my "to make again" recipe book.

Good Flavor
I thought the flavor was very good. I made the mistake of using brown rice instead of white. By the time the rice was done, the chicken had dried out. I will be making this again. Thanks Tammy!
