Tomato Cucumber Salad

Description: 

A medley of fresh tomatoes and cucumbers, tossed with seasonings

Yield: 

8 small servings

Ingredients: 

2 cups chopped fresh tomatoes
3 cups chopped fresh cucumbers (peeled)
1/4 cup chopped onions (can be green onions OR regular)
2 Tablespoons Italian seasoning
1/4 teaspoon basil
2 teaspoons vinegar or lemon juice
Pinch of pepper
Dash of garlic salt

Instructions: 

1. In mixing bowl, toss together tomatoes, cucumber, and onions.

2. In a separate bowl, whisk together the seasonings and lemon juice (or vinegar). Pour over cucumber and tomato mixture, and stir to coat. Cover and chill for at least 30 minutes before serving.

This is probably my favorite way to eat fresh tomatoes (and cucumbers)! This quick and easy, no-cook summer salad combines tomatoes and cucumbers with just the right seasonings for an irresistable side dish! It may not look like much, but it tastes awesome! My rating: 10/10

Nice and Simple

This is a nice recipe, but it's also great without the lemon juice or vinegar! I usually do just salt and pepper, basil, and garlic salt. Yummmmm! I love it that this salad doesn't include any fat. Super healthy, and supper good.

Well liked here!

This is a simple and easy salad to prepare. I have often made up my own cuke and tomato salad, but never thought of using these seasonings. Delicious!!

Refreshing!
