
A colorful and delicious soup medley of sliced turkey sausage, fresh kale leaves, and potato chunks. This soup is simple and flavorful and we love it!
6 servings (about 8 cups of soup)
8 ounces fully-cooked smoked turkey sausage, sliced
1 medium-large onion, chopped
1 tablespoon minced garlic
6 cups chicken broth
1 1/4 pounds potatoes (about 3 medium), peeled and diced
12 ounces fresh kale, stems removed and leaves chopped (about 8 cups chopped)
Salt, to taste (if needed)
1. In a large stock pot, brown sausage slices.
2. Add onion and garlic and saute for a few minutes, until onion is translucent. Add broth and bring to a boil.
3. Stir in potatoes and kale. Simmer partially covered for 10-15 minutes, until potatoes and kale are tender. Add salt to taste, if needed. Serve hot.

My mom found this recipe for Turkey Sausage Kale Soup in a Woman's Day magazine in the waiting room at her dentist's office last winter. Knowing the abundance of kale growing in her garden, she copied down the recipe and brought it home. The soup is delicious, and a perfect way to enjoy kale throughout the cooler months!
